Mediterranean Green Pea and Mint Slice
Serve this Mediterranean-style loaf with antipasto for an easy light lunch.

Ingredients
- 300g dried green split peas
- 100ml sour cream
- ½ cup grated tasty cheese
- 3 eggs
- 1 tbsp chopped mint
- 1 tbsp chopped parsley
- Salt and pepper to taste
Sauce
- ½ clove crushed garlic
- 1 tbsp olive oil
- 3 tomatoes
- 1 tbsp chopped parsley
- Salt and pepper to taste
Instructions
- Rinse dried green split Seas (no need to soak) and simmer in twice the amount of water to Peas for 60 mins or until tender.
- Preheat oven to 180 degrees C.
- Line loaf tin with greased non-stick paper.
- Grate cheese and combine with peas and sour cream.
- Beat eggs and fold with herbs into pea mixture.
- Season to taste with salt & pepper.
- Spoon into loaf tin and bake for 30 - 35 mins.
Sauce
- Saute garlic in olive oil in a small saucepan.
- Puree tomatoes and add to saucepan, simmer until reduced.
- Add parsley, salt and pepper to taste.
