Hommos

This tasty starter is easy to make and can be spread on pitta or Turkish bread, or served as a dip with vegetable strips, water crackers or corn chips. It also goes beautifully in sandwiches instead of butter.

Makes:about 3 cups
Preparation:15 mins

Ingredients

* about 250 g dry chickpeas

Instructions

  1. Purée chickpeas with yoghurt, oil and lemon juice in small batches in a blender. The mixture should be thick and not watery.
  2. Add crushed garlic and herbs, and mix well.
  3. Adjust salt and lemon juice to taste.
  4. Garnish with parsley.

Stores several days in refrigerator and freezes well.
