Hommos
This tasty starter is easy to make and can be spread on pitta or Turkish bread, or served as a dip with vegetable strips, water crackers or corn chips. It also goes beautifully in sandwiches instead of butter.

Ingredients
- 600 g (about 3 cups) cooked chickpeas *
- 2 tbsp lemon juice
- 2 tbsp yoghurt
- 1 clove garlic, crushed
- Salt
- 1 tbsp olive oil
- ¼ tsp fresh thyme
- ½ tsp each fresh basil and oregano
- Parsley sprigs
* about 250 g dry chickpeas
Instructions
- Purée chickpeas with yoghurt, oil and lemon juice in small batches in a blender. The mixture should be thick and not watery.
- Add crushed garlic and herbs, and mix well.
- Adjust salt and lemon juice to taste.
- Garnish with parsley.
Stores several days in refrigerator and freezes well.
